Eating gluten free is very difficult, especially in the United States, where foods that contain gluten are very common, and frequently hidden. Gluten is a protein which is commonly found in many types of grains such as wheat, which contain wheat gluten. Gluten intolerance can be treated successfully by removing all forms of gluten from the diet. Celiac disease is an autoimmune disorder where those affected cannot tolerate gluten, a protein in wheat, rye, and barley. If someone with with Celiac Sprue eats gluten, even small amounts, the lining of their small intestine is destroyed. Celiac disease is most commonly misdiagnosed as irritable bowel syndrome, gall bladder disease, Crohn's disease or ulcer or other digestive or intestinal disease. |
