Sources of Gluten

Gluten is a protein found in the grains of wheat, barley, rye, oats (that have been contaminated by other grains), however spelt, quinoa, and other more exotic grains have traces of gluten as well.

Celiacs have, quite simply, a malabsorption or digestive disorder caused by an intolerance or sensitivity to gluten.

If you are symptomatic, some simple tests can be suggested to determine if you may be a Celiac.

Maintenance of a strict gluten-free diet can be quite difficult
in the United States
due to the random distribution
of gluten...

Individuals with gluten sensitivity must very carefully evaluate every type of food that they come into contact with to make sure they prevent any exposure to gluten or gluten products. Gluten sensitivity occurs when the body's immune system mistakenly identifies the protein gluten as dangerous. While completely removing gluten from the diet can be difficult, the treatment is usually effective at curing all related symptoms and even allows the damaged lower intestine to repair itself.

Eating gluten free can be challenging, especially in the United States, where foods that contain gluten are very common, and frequently hidden. Gluten is a protein which is commonly found in many types of grains such as wheat, which contain wheat gluten.
Gluten intolerance can be treated successfully by removing all forms of gluten from the diet.
Celiac disease is an autoimmune disorder where those affected cannot tolerate gluten, a protein in wheat, rye, and barley. If someone with with Celiac Sprue eats gluten, even small amounts, the lining of their small intestine is destroyed. Celiac Sprue is not an allergy and those with celiac disease are gluten intolerant. Food allergies and wheat sensitivity or wheat or food allergies are much different than having celiac disease, however wheat free and gluten free cookbooks can be helpful for those with food allergies.
